Zucchini Chocolate Chip Bread

…Did I mention we had a lot of zucchini?

I couldn’t waste the rest of the zucchini I had used before, so of course I just made some more! This time with just chocolate chips and in loaf form…..This recipe comes from my mom’s recipe box and with a few tweaks this is what I’ve come up with.


  • 1 cup grated zucchini
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cup flour
  • 1 tsp cinnamon
  • 1/2 cup vegetable oil
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/4 tsp baking powder
  • 1 cup chocolate chips– I chopped up regular sized chocolate chips, but mini chocolate chips would work just as well.

1. Preheat oven to 325.

2. In a bowl mix wet ingredients together first, and dry separate. Slowly add the dry to the larger bowl, mixing well. Mix your grated zucchini in and chocolate chips. I opted to leave out the nuts of this loaf, but walnuts are a great addition!

4. Bake for 60-65 min. Mine took 63 min

5. Cool in pan for 10 min and remove.
