Did somebody say MINT?! Oh yea, that was me. Mint is just a great addition to baking, as it pairs deliciously well with chocolate, I’m sure you agree 😉
To add a bit of fun to these I also colored them green… I mean why not right? They’re mint chocolate chip cookies…. it felt right.
I took these into work on Friday and I think they were gone by 10 am. I know my coworker Tim was responsible for at least 6.. but how could he not!? They’re just soft and chewy enough to have that melt in your mouth deliciousness. That.. gotta have it, gotta have some more NOW cookie appeal.
Cookies are kind of the definition behind the name of this blog… because I (bee) always surrender to the sweet, delicious, alluring smell of a freshly baked cookie juuust out of the oven. I hope you do too 🙂
- 3/4 cup brown sugar
- 1/2 cup sugar
- 2 cups flour
- 1 and 1/2 stick of butter (melted)
- 1 egg
- 1 egg yolk
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 cup chocolate chips
1. Preheat oven to 375.
2. Cream the butter and sugar together and then add the egg and vanilla. Slowly mix in the dry ingredients until the dough is blended well. Add your green food dye– this can be up to our descrition on how green you’d like your cookies to be!
3. Form the dough into balls, making them taller than they are wide to prevent too much spreading! Bake for 7 minutes– be careful not to over bake! Enjoy!
