Banana Buttermilk Chocolate Chip Muffins

Aren’t muffins just great? I had some leftover buttermilk from the Irish Soda Bread I made over the weekend and I wasn’t sure what to do with it. But wouldn’t you know, buttermilk gives muffins that oh so delicious light and fluffiness. I also over estimated how many bananas I would eat this week and wasn’t in the mood for pancakes… Sometimes the mistakes I make still turn outalright in the end. At least with food. IMG_2850



Ingredients: IMG_2857

  • 1/2 cup brown sugar
  • 3 cups flour
  • 2 cups sugar
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 2 eggs
  • 1 cup buttermilk
  • 1 stick butter
  • 4 very ripe bananas
  • 1 cup chocolate chips



1. Preheat oven to 350. Mix together in a large bowl all the dry ingredients.

2. In a separate bowl whisk eggs, add butter and buttermilk. Slowly add the dry ingredients to the wet mixture. When combined add the bananas until incorporated. Lastly, fold in chocolate chips.

3. Bake for 25-28 minutes until slightly browned on top. Let cool and enjoy!
