Blueberry Banana Bread

Happy Sunday! Blueberries were on sale at the grocery store on Friday, so voila! This recipe comes into being. My cousin Angela actually sent me this recipe, or rather a picture of this bread, and inspired me.




I’m trying to start up a health kick. Since moving to Chicago I’ve been doing pretty well with cooking dinner every night, but man… cooking for one is hard! Portions just don’t even out the same way. But enough complaining and back to the health kick. (I’m also going to start running three times a week…when it stops snowing) IMG_2750



Health kick. This bread. Right, back on topic. So this bread has zero butter and only a little bit of brown sugar in it. How so you might ask? Greek yogurt! Greek yogurt is a great healthy substitute for butter and creates a really great, moist bread. I will probably make this bread again and try it out with butter and sugar instead of Greek yogurt, but since I know I will probably eat a large amount of this bread I decided to be smart about the ingredients.



Ingredients: IMG_2749

  • 1 1⁄2 cup flour
  • 1 1⁄2 tsp baking powder
  • 1⁄2 tsp salt
  • 1⁄2 cup brown sugar
  • 1 tsp vanilla extract
  • 3  large ripe bananas
  • 2  eggs
  • 6 ounces Greek yogurt
  • 1 cup blueberries




1. Preheat oven to 375 and spray your bread pan
2. Combine eggs, vanilla extract and sugar and  mix until there are no lumps. Add all the dry ingredients and mix well. Add the yogurt and the mixture will start to be smoother.
3. Add bananas and mix well, your batter should finally be more liquid-like. Fold in the blueberries- do not mix or you’ll crush the berries!
4. Cook for 60 minutes and let cool before eating. Enjoy!
