Pumpkin Chocolate Chip Cookies

I am still on my pumpkin kick! And I was in the mood for cookies, so voila! Pumpkin Chocolate Chip Cookies. And I’m quite proud of these, they got a great review by my fellow coaches. Therese is gonna be excited she got a mention in this post too.

Anywhoooo, here is my own recipe for these delicious fall treats!

Ingredients:

  • 1 egg
  • 1 cup sugar
  • 2 cups flour
  • 1/2 cup vegetable oil
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp vanilla extract
  • 2 cups chocolate chips
  • 1 cup pureed pumpkin

Directions: 

1. Preheat oven to 350.

2. Mix dry ingredients together and set aside. In a large mixing bowl combine the wet ingredients and slowly add the dry until completely mixed. Add the chocolate chips last and fold them into the mixture evenly.

3. Using spoons place cookies on tray and bake for 10 minutes. Let cool on pan for a minute before transferring to rack or paper towels to finish cooling. Enjoy!
